THE COTTAGE PANTRY, NAUL is run by professional Chef William Phillis. With over two decades of experience in the restaurant industry, William’s love for food began at a very young age when he would go on nature walks with his mother near their home in Co Kildare, foraging and making things from their adventures. This led to William working at a local restaurant at 15 years old, and from there he went on to study to be a Chef at 18, where he met his wife, Angela. They have 4 wonderful children together.
Having had the privilege of working for and alongside some of Ireland’s best chefs, and honing his skills, William has decided to take a simpler approach to cooking. His ethos is to use some of the wonderful artisan food supplies that Ireland is world famous for, to cook good locally sourced food, accompanied by rich flavoursome coffee and friendly service. Sounds like a recipe for success!

The Cottage Pantry was officially opened by Mayor of Fingal Séana ÓRodaigh on December 12 2021.
