This workshop will teach you how to safely identify native Irish wild foods and how to incorporate them into your everyday cooking.
The following topics will be covered.
* Wild plant identification
* Culinary uses
* Cookery demonstration and tastings
* Wild herb preserves
The morning session of this workshop takes place at The Herb Garden, where we will identify and harvest wild herbs and berries. The identification session will be followed by a practical demonstration on cooking with the herbs we have foraged.
Recipes will include the following, depending on season and availability.
* Nettle soup
* Wild herb omelette/frittata
* Wild berry chutneys/sauces
* Wild berry syrups and liqueurs
From 10:30am to 4:30pm
